     This 12 qt., 3 pieces double boiler is constructed of durable stainless steel with a sandwich-clad bottom. Use this double boiler for melting chocolate or making delicate sauces as the cooking process is slower and more gentle to handle delicate foods that may burn easily.      It is constructed with durable, 22 gauge stainless steel, so it won't discolor or react to acidic foods over time. The thick, 4 mm aluminum core is designed to withstand the rigors of everyday use in your commercial setting. Plus, its aluminum clad bottom and sides attract and evenly distributes heat, thus eliminating hot spots.

     For a secure grip during transport, it features welded, side-looped handles to ensure a permanent connection between the handles and the double boiler. Since these handles are on both the inset and boiler pot, it ensures long-lasting quality in high-traffic commercial settings.

     This double boiler is ideal for making delicate sauces due to the three separate components. The boiler pot is made to hold water while the inset fits tightly into the pot, thus heating the food through a gentle but efficient steam heating process. Then the cover is included to hold in the heat for gentle simmering.
